Protein-packed pancakes

INGREDIENTS

  • 1 c Kodiak cake flour
  • 1 c Organic Almond milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp of Organic coconut oil
  • Maple syrup

Directions:

  1. Place flour, almond milk, egg and vanilla extract in a bowl and stir batter until combined (do not over-beat). 
  2. Heat oil in nonstick skillet over medium-low heat. 
  3. Pour 1/4 cup of batter onto a heated and greased pan or griddle. cook on medium-high heat, until bubbles form on the top. 
  4. Flip and continue to cook until golden brown. 
  5. Serve with fresh berries and maple syrup.
